Drop it like a…Biscuit

Although I love bisquick, I gave it up when our last mega-box ran out. I just did not feel right about making biscuits out of what appeared to be flour and milk. It just did not add up to me.

So, today, in celebration of fall (I wish that it was not coming this quickly), I made homemade biscuits. I looked for recipes online because I do know that it is possible to make food with actual flour. Not everything has to come from a box or your local grocers freezer aisle. I found a recipe that called for 10 cups of flour. And I was terribly vexed by this. First of all, only two out of three people in my household eat actual food. Second, who wants to actually measure out TEN cups of flour. Third, what the heck am I supposed to mix that in. So that obviously was not the recipe that I made.

I did find another one that called for six tablespoons of mayonnaise. I was a little hesitant, but it only wanted two cups of flour. How reasonable and fair. I have also heard that mayonnaise is very moist when you cook with it. Some people use it in cakes, I am not one of those people. But I have heard of such things.

So this is what I did, and it turned out very well.

Drop Biscuits

2 cups self-rising flour
1 cup milk
6 tablespoons mayonnaise

or here is a healthier version (this is the one that I actually used)

1 1/2 cups whole wheat flour
1/2 cup unbleached white flour
1 tablespoon Baking Powder
3/4 teaspoon salt
1 cup milk
6 tablespoons mayonnaise

1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, stir together flour, milk, and mayonnaise until just blended. Drop by spoonfuls onto lightly greased baking sheets.
3. Bake for 12 minutes in the preheated oven, or until golden brown. It took me about 15 or 16 minutes until they looked done.

We had them with a couple cans of Progresso soup. It was a yummy dinner.

Coconut Curry Tofu

Last night for dinner we had a banana split from here. I begged jj to let us go there again tonight for the same heavenly confection. He said no. So instead, we had Coconut Curry Tofu.

It was beyond good. I think that I will make it every week for a while. And it makes a lot.

Coconut Curry Tofu
2 bunches green onions
1/2 teaspoon brown sugar
1 1/2 teaspoon curry powder
1/4 cups soy sauce
1 1/2 teaspoon minced fresh ginger
2 teaspoon chili paste
1 14 ounce can coconut milk
1 pound firm tofu, cut into cubes
4 roma tomatoes, chopped
1/4 cup chopped fresh basil
1 yellow bell pepper, thinly sliced
4 ounce fresh mushrooms chopped
4 cups chopped bok choy

1. Do all the chopping of vegetables first.
2. In large skillet over medium heat, mix coconut milk, 3 tablespoons soy sauce, brown sugar, curry powder, ginger and chili paste. Bring to a boil.
3. Stir tofu, tomatoes, yellow peppers, mushrooms and finely chopped green onions into the skillet. Cover and cook for 5 minutes, stirring occasionally. Mix in basil & bok choy. Season with salt and remaining soy sauce. Continue cooking for 5 minutes, or until vegetables are tender but crisp.
4. Serve with rice.

I did not have ginger, so I used nutmeg. I used that chili paste with the chicken picture on the bottle. If you make this with tofu, get it from Wild Oats. It was so good, I have had it from other places and theirs was the best. But you could make it with chicken or anything else you wanted to use. I used a red bell pepper and canned mushrooms. To cut up bok choy you do it just like celery that you would use in chow mein or stew or something.

Try this though and if you don’t want to make it, call me and I will make it for you.

Pictures Galore

I just made these wedding announcement for a couple. The names have not been changed to protect the innocent. But I really thought they were cute.

Variation on a theme.

Somosas, they are delightful little pockets of cauliflower, carrots, onions and curry wrapped in phyllo dough; homade roll and a Clif Nectar bar, they are so good; yogurt and frozen blueberries; carrots and celery.

Stuffed green bell pepper; devils food chocolate pudding and frozen raspberries; Macadamia nuts and some gross thing from Hawaii that jj loves; spinach salad with Italian dressing on the side.

Chicken vino bianco (from The Olive Garden); carrots and celery; yogurt and frozen blueberries; cantaloupe.

Steamed rice; Shrimp and veggie chow mien for the rice; nectar bar (yum); pudding and raspberries.

Chicken Cesar wrap from Wingers; pudding and raspberries; pear slices; spinach salad.

I made this for dinner one night. I only cook really well like once or twice a week and I always plan to pre-made or eat out nights into the week. These are from one of the nights I cooked. Salmon skewers on a bed of couscous, grilled zucchini, and lettuce. It was really good, but way to much zucchini was made.

Gentry also likes to watch me cook and he has picked up my habit for organizing food. He has placed our potatoes in the cup holders of the cooler.

Lunches for a week or more

These all read clockwise.

Homemade Pitas and Anzac Bisquits. Yogos. Diana’s Chicken and Sweet Corn Fritters. Orange sections, carrots and celery.

Homemade pitas and anzac bisquits. Annabel’s Vegetable Fritters, these are made of sweet potatoes, pumpkin, potatoes, leeks and mushrooms. The kid ate them which is practically a miracle. Grilled chicken, carrots and celery. Mini 3musketeer, york peppermint patty and yogos.

Red leaf lettuce and grilled chicken. Pitas. Orange sections, carrots and celery. Pineapple jello with cantelope. Cesaer dressing. This made cesaer chicken pita sandwiches. It was good. I also had it for lunch.

Totinos pizza (I know, way less than healthy, but it tastes so good). Orange sections and caramel candy. Pineapple jello and cantelope. Annabel’s Vegetable Fritters.

Pitas and starbursts. Edemame or soybeans, a yummy and high in protein treat. Chocolate pudding and frozen strawberries. jj raved about this. He just mixed it all together and inhaled. Hamburger patties with mushrooms, tomatoes and italian dressing in them. They were really good and did not need mustard or anything on top.

We are running low on food. I shop on Friday. Grilled chicken. Celery and carrots. Yogos. Chocolate pudding and frozen strawberries.

Bake me a cake as fast as you can

I have been going crazy with the cooking lately. I think because I am trying to get the kid to eat something. So I have been really researching healthy foods and things. The past two weekends I have baked up a storm.

Here are Anzac Bisquits.

Pitas

Mediterranean Breakfast Bake which included the pitas, feta cheese, canadian bacon and a tomato cucumber salad. jj said that it reminded him of his church service in Russia and the food from there.

I also made rolls, but forgot to take a picture of them. They were heavenly. But this is what the yeast left in the bread mixer. Yeast is such a weird and cool thing. I also made a pineapple strawberry trifle and forgot to show that. It was dessert for Mother’s Day.

Stuffing

Thanksgiving was great. jj made a pumpkin, apple, and pecan pies. I only tasted the pecan, because really why would you even make the others. It was very good. I made a turkey and some stuffing. I think that my turkey needed a bit of work, I thought that it would be amazing with all the cooking wine and butter I put on it. The name of the recipe is “Worlds Best Turkey,” but I think it did not cook long enough. It was long enough to be safe, but not long enough to be tender. However, I did make some stuffing that was amazing. So good. The recipe follows:

Cranberry, Sausage, Apple Stuffing

Yum, it calls for vegetable broth, but does not say what to do with it, I dumped a cup on the stuffing in the pan before I cooked it. I also did not cook it inside the turkey. I really do not like the idea of shoving bread and otherwise good food into the internal cavities of animals.
